HEALTHY APPLE MUFFINS
Happy Fall! Baking season is back and so are my festive and healthful recipes to help warm up these chilly days. This delicious recipe focuses on incorporating more whole foods instead of the artificial ultra processed ones you may find on the ingredients list of many pre-made muffins at the store. Combine these ingredients, use an immersion blender to break down oats into smaller bits, and bake at 400 for 15-20 minutes (depends on depth of muffin tin!) Use a toothpick to test for doneness when the tops become golden brown. Enjoy!
2 cups of rolled oats
2 eggs
2 diced apples
a very ripe banana
2tbsp coconut oil
2 scoops of vanilla protein powder
1/3 cup flaxseeds
honey to sweeten
3/4 tsp baking soda
1 tsp (or more) cinnamon, nutmeg, and ginger
splash of milk
