QUiCK REMINDER TO EAT MORE BEETS!
After washing the bunch I pluck off the leaves and put them to the side. Then I cut off the tops and bottoms of the beet. I skinned and diced them and put them in a pan with olive oil, white wine vinegar, garlic powder, sea salt, and black pepper. I covered the pan and left it over medium heat for about ten minutes. Then I threw in the greens (they cook much faster) and a slice of orange for some sweet citrus. I left this covered again for about five more minutes.
