And I present… the BUFFALO CAULIFLOWER BOWL!
The buffalo cauliflower is super easy and incredibly delicious! I chopped up fresh cauliflower and cooked it in a covered pan with water and olive oil for about 12 minutes over medium heat.
After removing the lid and letting the water steam off add a healthy amount of your favorite hot sauce and shredded cheese (I chose a mix of white and yellow cheddars and Colby jack) and stir until cheese is empty. To make this extra creamy, add a spoonful of cream cheese towards the end and stir until completely melted.
I paired this with garlic sautéed kale, black beans cooked in a cilantro chutney, and avocado chunks.
